Also, check that your store's email settings are ... configured to send emails! Navigate to your store's contact_us page and send yourself a message. Does it get there?
If there is no record of the order, then that means your site encountered PHP errors when trying to save the order after payment.
This could be a problem with your payment module (You didn't say which payment modules your customers are using on your store), or a problem with plugins you've installed (you didn't list your plugins/addons).
