The typical way that this is suggested is to create a separate category to which all the products desired to be on sale have their master_categories_id set. Then the product remains linked to your desired category on which to display, the sale category is "disabled" at least from display but the product remains active and then the sale is applied to the sale category which is reflected back to your base/display category...
There may also be some sort of plugin that has been developed to accommodate that, but other than some sort of custom coding, the above process/setup is typically suggested.

I have 100's of items in the categories...but on 3 items I want to exclude. To much work.
Not really with a few sql statements...
Hardest part would be creating the new category that will be disabled. (suggest doing that through the admin panel, far easier.)
Then, if you know in what categor(ies) the three items exist, use a sql statement to modify the master_categories_id to the new sale category.
Then add to the products_to_categories table all of the products that are in the sale category (creates a linked product). Then set your sale to the sale category and remove from the category(ies) that had the three or four product.
If that is something still difficult to do, speak up and more specific instruction can be provided.
