How do I display "Sold Out" on my products?

I'm trying to keep showing a product that is out of stock, but simply replacing the "add to cart" option by "out of stock"...

When I put the item as "sold out", it disapears... but the settings I have are supposed to let it be... when I try to change the options in the screenshot, nothing changes in my storefront...

You leave the Products Status set to "on" (1) and then on the individual product you change the stock level to '0' (zero). Also set 'Show Sold Out Image in place of Add to Cart' to '1'.

You can do that automatically by simply letting the orders subtract the stock levels - when it reaches '0' then "Out of Stock" is displayed.
