Unfortunately, on zc157 (and possibly zc156), the overly-aggressive admin-sanitization will convert those <'s to &lt;'s and >'s to &gt;'s.

I have been doing some reading on the levels of sanitation and it looks robust. I am on 1.5.7c so I am currently up to date.
