We have created a new Zen Cart website and want to move the customer and order databases from our old Zen Cart site (Ver. 1.5.0) to our new site (Ver. 1.5.4). What are the best practices for this move?

Best way is to bring the entire database over, then run zc_install to upgrade its contents and structure, then go live.
This of course will wipe out all the contents of the (now temporary) "new" database, replacing them with the old. The zc_install upgrade step brings the database up to current requirements.
And, because you're wiping out the temporary v154 initial setup data, you'll lose any test customers and test orders, which is actually ideal.
But you'll also lose any "new" customers and orders that have happened on the new site.
