Is there any way to configure the Contact Us dropdown list contents to make zen cart send extra copies of customer sent Contact Us emails to multiple names and addresses without revealing those names and addresses to customers? I'd rather not change the code if I don't have to.

Sure. Completely outside of Zen Cart.
In your hosting account, where you configure your email addresses, create an "alias" or "forwarder" for that. Such as "sales@your_domain.com".
Then configure it to send all emails to "sales" to both Sally and Fred.
Then in your Zen Cart store, just put "sales@your_domain.com" as the address..
