how to create sub categories

What i'm looking to do is something like in the picture. right now I have those funky characters in front of the sub categories and I actually have to click on the top category to get the sub categories to display. Now in the picture these 'top links' aren't actually links just extra headers, but since my categories are automatically generated I not sure I can add headers inside my categories list. Can I?

Sometimes one needs to slow down and look under the hood or in the user's manual. In your case, you might want to spend some time finding out all the things you can do under the configuration menu.
For instance, the Layout Settings menu has a lot of ways to massage the categories and sub-categories without all the fuss and muss.

OK, so from that screenshot you already have categories. Using Catalog->Categories/Products, you can

1. Create a new category and its sub-categories somewhere in your existing category tree.
2. Copy and/or move and/or Link products from one category to another (remembering that once products are in a category, you can't add more sub-cats).

For the categories' sidebox layout, I've had success with Categories Dressing. Don't be put off by the fact that it hasn't been updated since zc138, just be mindful when you merge any of the sidebox code ... it still works "the treat".
