There's also the Do-it-yourself responsive template "plugin" that can be adapted into an existing non-responsive template.
Ultimately though it is going to be a lot of trial and error in getting the media related css to apply the desired effects when/where they are desired.
Another option to add to what chuckphilips provided is to clone an existing responsive template (ie. The one provided in ZC 1.5.5 and 1.5.6), apply the changes that have been made as a "plugin" for the responsive classic template, and then again clone that "new" template so that you can begin making changes to suit your needs...
Others will start with a template of their own and the ZC code into it so that all of the existing functionality can be maintained. There's a lot of options and for success of the template I would recommend ensuring that every existing feature be worked into the templated design.

A good template to start out with is the ZCA Bootstrap Template, it is compatible with 1.5.6, use the github link in my signature for it hasn't been uploaded to the plugin section yet.
You can also use the Responsive DIY Template Default for 1.5.x as a base to convert any available template to a responsive one or build your own. This hasn't been updated for 1.5.6
If you want to use the built-in responsive, it can be a little less daunting if you use the Color Change Mod
