Someone was kind enough email me not to long ago (but I cannot find it now - of course) on this same question the other week.
Please reply again with the link to the Mod that allowed one to change, delete, rename the Status in the dropdown menu

It's not a mod, it's built-in. Navigate to your admin's Localization->Orders Status.
