You can do that if you have your software configured to use the default ports. In MAMP, this is done in on the main window in the Ports tab.

Sadly the option to use the default ports is not open to me as a Windows process is using port 80.
Anyway, if you listen, you can probably clearly hear the sound of me smacking my forehead really, really hard. The problem was I had not set the root folder path for SSL so it couldn't see my store when using SSL.
So, to summarize for the benefit of those who might walk this road.
1) Don't use PHP 7.4. Zencart 1.5.6.c is not ready for it
2) In the admin configure.php use the SSL domain for HTTP_SERVER
3) Enable SSL in Apache, install certs, set root paths for normal and SSL
4) Read the instructions in docs folder of your zencart kit. I got complacent and thought I knew them from the last time I did this. Very dumb move. Don't be dumb.
