In Zen Cart 1.5.7, it's easier to wrangle large lists of option names and values.
The Option Name Manager now allows you to sort by ID (which means you can get to your most recent addition just by going to the end of the list).

The Option Value Manager now allows you to filter so that only one option name's values are visible:
