How to "properly" set up a repository?

I know this is kind of a no-go in some cases (namely PCI validations if I'm reading it right), but I am wondering if it can be done.

Is it possible to fork the repository containing ZenCart and configure it as to allow upstream pushes when a new version or subversion is released? I tried to do it this recently and ran into a huge amount of conflicts (namely around the admin area directory). I know that I will need to manually pull the fork from the ZenCart git and do the comparisons manually, that is fine. But I would like to ask for guidance before I dive in again and run into a brick wall.

If you're not contributing to the project, you should just wait for the releases; it won't help you to have a copy of the repo.
