However, UPS & USPS are delivering quotes for a 200lb item

How do I cap the amount that can pull a quote?

So I get that it's split in to boxes... but USPS has a 70 pound limit and 1 item weighing 125 lbs in my cart and it's pulling a USPS quote as well. Also, 1 items is clearly one box yes?

What are the site's settings for Configuration :: Shipping/Packaging

Enter the Maximum Package Weight you will ship
Package Tare Small to Medium - added percentage:weight
Larger packages - added packaging percentage:weight

It might be that the 125-pound item exceeds the calculations based on those settings.

See this (https://github.com/zencart/zencart/issues/5564) Zen Cart GitHub issue. The problem is that that product's weight exceeds your site's stated maximum weight so that the product is being 'chopped' into 2 boxes for the shipment!

For right now, if you update that setting to be 150 (or whatever the maximum-weight product you've got) that will work-around the coding miscalculation.

This works except it shows no information at all on the shipping estimator just no rates like the website is broken or something. Then if you proceed to checkout you see

Checkout cannot continue, no confirm button. Which is expected behavior, but the shipping estimator makes it seem like the website is just broken. Any thoughts?

USPS, Free Shipping & UPS
