I use xampp very simple to use.
Based on which version of zencart you use will determine which xampp you will install.

I'm fairly sure that XAMPP's MariaDb can be replaced with MySQL. I've got that planned for installation on a new notebook, but have never actually tried. I asked because MySQL was the one "complaining" in the message you'd posted above.
