I have set the pricing to be visible only to registered users. Now all products display "price unavailable" but I would like to change this to something else. Maybe "Login for Direct Pricing"

You need to discover a new tool ... Tools ... Developer's Tool Kit ...
In the bottom input box type the text you want to change:
price unavailable
Select Catalog on the dropdown ... click Search ...
Now everywhere this is defined will show ...
You need to copy the files you need to change to your templates and override directory and make your change to the define(s) you need ...

Can you clarify this for me?
Are you saying I need to copy these files whatever and wherever they are located to the template and override directory?
Modify them and then leave them in the new directories?
I am OK with how to locate and how to edit the files manually but I am not sure what you mean with the other steps though.

Yes you want to copy the language file it is in to your overrides directory:
/includes/languages/english.php
/includes/languages/english/something.php
Go to:
/includes/languages/your_template_dir/english.php
/includes/languages/english/your_template_dir/something.php
