I am about to have close to 160 scents go in to this and i was wondering if there is a way to orgnize it other than alpa.......
    Thanks in advance!

and a way to add more than just one at a time to a product?

No, you can't reorganise the OPTION VALUE choices at the level your images indicate.

Attributes are time-consuming, but you can COPY attributes from any product to other products and / or categories.

Often, you can save time by copying first, then going into products and either EDITING or DELETING attributes as are necessary.

Peek in the Catalog ... Option Name Manager ...

There is a nifty little copy tool to add all of the Option Values of an Option Name to a Product:
Add ALL Option Values to ONE products for Option Name
Update ONE product that has at least ONE Option Value and Add ALL Option Values in an Option Name
NOTE: it is a good idea to backup your database before using features like this and you are learning how they work ...
