Could be a number of things. First things first, what do you have Admin - Email Options - Convert currencies for text emails set to?

Pity, that was the easy option. OK, text emails, html or both? I presume we're talking mainly about order confirmation emails here, since they have amounts in them?
And could you have a look at the headers of one of the emails and see what Content type, charset and content encoding it's using. Should be all grouped together, something like:
Content-Type: text/plain; charset = "iso-8859-1"
Content-Transfer-Encoding: 8bit
You can try the escape sequence for this and it might be a better option not positive about text mails as I believe they still use utf-7
£ in place of £ this may still not work
