I have quite a few Zen Carts across different URL's and have a single Paypal address.
With that single address is there a way to redirect back to different sites or what can i do?

There is no problem using multiple sites with one paypal account.
Zencart will override the return url.

azrahn is right, you just set up each shop for paypal using the same paypal account email.
So, just to be clear, in the directions for setting up PayPal, this step:

I'm having trouble with one of my carts not recording some paypal orders and wonder id it's not because the return url doesn't point to that site.

Good morning, Kokonutmama ... all our shops use the same PayPal account, so use the same email address in the PayPal setup in Zen Cart. On the PayPal site, our IPN switch is turned on, and the checkout_process URL for one of the shops is entered, because PayPal requires an URL to be entered. But we have not found any problem with the transactions being returned to the correct shop.
I believe that PayPal had some problems with delayed IPN yesterday, maybe that's what caused your problem?
thanks inover, good to know. i actually have consistant problems with that one site and echecks, i'm sure it;s a problem that's addressed elsewhere.
make sure that you are using the default paypal email address in the paypal modulke settings for the store that dosnt work
also make sure that your .com/ipn_main_handler.php is available
