Having bought the book I had several problems using XAMP running on OSX. This was extremely frustrating as I felt I was tantalizingly close getting it running on my laptop, which in my opionion is the only way you can develop a site without loosing your marbles.
I solved it by installing something similar but specifically aimed at the OSX (MAC) environment called MAMP, which you should be able to Google very easily. I did this after unsuccessfully using XAMP, and prior to that, unsuccessfully using the APACHE server that comes bundled with OSX. I have been running a local Zen installation on two of my MAC's without any hickups since January. One is on 10.4 and the other is 10.5.

I just tried installing zen cart on my macbook (Leopard) and ran into the same internal server issue when accessing admin page, and my cart didn't have the right layout.
It was fixed by the suggestions here.
I ran the following script in a terminal (Applic########>Utility>Terminal)

Thanks to Kobra and Mewell and everyone else for suggestions here. I was having the exact same problem with same set-up- on my local Apache server on my Mac. I ran the command in a Terminal Mewell suggested a few pages back..
Then I looked for and changed all .htaccess files to .htaccess.txt (both in admin and includes) in my zen files and voila! All fixed.
