Details of Ordered Items Not Saved

Hopefully someone can help shed some light on this...

When someone buys one or more items from our store, the details of each of those items are displayed all the way through the checkout process, but when they're handed to PayPal - using IPN - only the total is displayed.

People are then sending payments but we have absolutely no record of what items they're buying. Those details aren't being saved by Zen Cart.

In the zen_orders table we can see the details of each transaction, but there are aren't any matching details in zen_orders_products. That means we can't see the details of the order in the admin interface either, just the name and the address of the customer and the total.

Some trouble-shooting pointers would be most welcome!

The following troubleshooting article is what I see recommended most often when folks mention that their store isn't recording the details of PayPal purchases. The problem is that your server isn't successfully receiving the complete notification from PayPal about the paid order, and thus the order cannot be recorded.
