Please help me understand Stock Levels, Out of Stock, etc

I would like to understand how ZC handles stock. Soup to nuts.

I have added a product to my catalog, marked it as "In Stock" and a Products Quantity of 1.

In Configure -> Stock I have the following settings:

• Check Stock Level = true
• Subtract stock = true
• Allow checkout = false
• Mark product out of stock = "***"
• Products status in Catalog when out of stock should be set to = 0
• Show Sold Out Image in place of Add to Cart = 1

So what I *want* to happen is for ZC to manage my stock levels based on sales - so if a product is bought that has only 1 it changes the number in inventory to 0. That would trigger the listing page to say "Out of Stock - Please Email" or something and not allow it to be added to the cart.

I don't want to have the product disappear from my catalog automatically. Perhaps when I go into the admin page for that product and mark "Out of Stock" but I want it to be there until I do that.

So does ZC do this and is how I have it configured correct??

You probably want to change to this:

Products status in Catalog when out of stock should be set to
Show Products when out of stock

0= set product status to OFF
1= leave product status ON

I have gone ahead and made this change. Will it now function as I expect?
