Is this scenario possible? I'll explain as best I can.

I have several groups of related items I want to sell by the piece in one listing. Each group will be assigned an option name with option type checkbox, Each piece is given an option value under the appropriate group/option name. Each group/option name will have 15 - 40 pieces/option values.

I want to encourage multiple purchases so using products price manager I want to set up discounts so the more pieces a customer purchases the less they will cost individually.

example:

If only one item is purchased it will cost 2.50

If two to five are purchased they will cost 1.95 each

If six or more are purchased it will cost 1.50 each

The thing is, no two items are exactly alike so a customer will need to select each item by ticking a checkbox for the item they want to include in their cart.

Is it possible to check the boxes to include the desired pieces in the cart, get the appropriate discounts and total price without also having to add a quantity number to the quantity box?

As it is set up now if no quantity is added to the quantity box and several checkboxes are selected and added to the cart, the total is the same as if one item is added.
