I am trying to speed up my site.
I have enabled the "SQL Cache method" by using 'File'

I see the files going into my cache folder. What are the pros and cons of using this. And should I enable this on my site?

You really have to run several tests with it set to each setting, non, sql, and file. Find out what works best on your site. I don't use file because it will randomly get errors about a missing file every now and then. If your site is really slow it not likely going to be a magic fix for you, just a minor improvement.
