Customer emails in HTML

I have just spent over an hour searching the tutorials and forums trying to find this, so please don't jump on me if it's obvious and tell me to search the forums.

I want to do two things: Make the Newsletter Subscribe radio button default to HTML rather than Text-only and make all emails generated by the store (welcome, reciepts, updates) go to them in HTML.

Can someone please tell me where and how to do that?
