How do I remove the "Zen Cart! The Art of E-Commerce!" from the top of my web page?
How do I also remove things like "recording artists", "record companies" and other nonsense like that from my extras and sidebox stuff?

It looks like you need to open the meta_tags.php in either the \includes\languages\english\ folder. That drove me mental for a while too.
Change this line:
// page title
define('TITLE', 'Zen Cart!');
// Site Tagline
define('SITE_TAGLINE', 'The Art of E-commerce');
I havent actaully done it myself as I'm looking at old php files, but I'm sure that that is it
DO NOT make changes to includes/languages/english/meta_tags.php. Follow the directions in the tutorial (link) I posted earlier and use the override system.
