A lot of the default text will disappear when you start your custom template. You can see the free templates available for Zen Cart at http://(sorry, site offline)/. Use the pulldown menu to change templates and see what they'll look like on a live site.

There's lot of information about customizing information in the Tutorials/FAQ and Wiki.
