Are you using one of the image handler add-ons or are you just doing it the default way?
The naming convention picandnix gave you is correct. If you're doing it the default way:
To upload second/third pics you do it manually via ftp - you DON'T go back to the edit-product page and play around there.
If you are already ftping the second/third images, and are using the naming convention that picandnix gave you - then give us a link to look at please because maybe you're uploading them to the wrong folder.

I am uploading the second image the same way as i am the first in cresting a product section (with the description and price etc)
I have never done this before so i am not familiar "ftping"

If I understand correctly then you are simply swapping one image for the next hence you are basically going around in circles. Name your images as I suggest above and upload them into your image folder either via ftp or via cpanel (assuming you have a host that uses cpanel). Then in your product description use 'my-image.jpg' as the primary product image, then provided you have named the additional images as stated then it'll work fine. Can we have a link to your product page to make sure you are doing it right.

Did you get to the bottom of this problem? I need a link to an item that you wish to show more than one image for. But I still suspect you are simply over writing your main image name each time in admin-category-products...
