I am having the same issue on the ckeditor install. I double checked the file locations as they are given in the readme.html. It says to upload them to the renamed admin folders which I did. I excluded the file that says it is not needed in v1.51 and uploaded the editor files to the editors directory.
I have no clue what I could have done wrong. I would appreciate any ideas or help.

And you have selected CKEditor from the dropdown in Admin >> Configuration >> My Store?

If it does not show up there are only a few possibilities:
- The mod was not installed correctly.
- Some other mod is "breaking" it.
- The custom template.
Since this mod lies solely in the admin, numbers two and three are unlikely.

I have compared the mod files with the files in admin and the files are there where they should be. Since I am using v1.51 there are only 2 files that go in admin. I also compared all the files in the editor directory and they all uploaded as well.
There is no other mod conflicting with it as this is the first mod I installed.
So I am clueless as to what could be wrong.

When you posted, you indicated 1.5.0 and now 1.5.1. Are you using the latest CKEditor mod? There is one that works with 1.5.0 and does not work with 1.5.1.

The 1.50 was an error/typo on my part, my sincere apologies.
When I downloaded the mod I clicked on "download the latest" and there is a not in the readme that indicates if you are using 1.51 not to include one of the files as it is only for 1.50 and another previous version (can't remember right now which one). So I am assuming that I downloaded and installed the 1.51 version.

I just took a fresh install of v1.5.1 and did this:
1. renamed the admin folder from 'admin' to 'abcdefg'
2. downloaded the ckeditor plugin from the zencart plugins library
3. unzipped the ckeditor plugin package
4. uploaded the 2 files from the unzipped /admin/ folder to the corresponding folders on my server's 'abcdefg' folder
5. uploaded the ckeditor folder from the unzipped /editors/ folder to my server's /editors/ folder
6. logged into my zencart admin
7. ckeditor shows in the places where it is expected to show

1. my admin folder has already been renamed
2. went in via ftp and deleted the two mod files previously uploaded
3. uploaded the two files again via ftp into my renamed admin
4. logged into zencart admin
5. Opened "My Store"--->Html Editor setting
6. Only option available is still "Plain Text"
