    So if they use that method, there is no payment due at the time of purchase? I need this customer to be able to check out without making a payment.

    The check/moneyorder payment method is kind of a promise to "put the check in the mail" -- no actual payment is required at the time the order is created.

    Direct answer is that yes money not collected, inventory is adjusted, payment to be provided by alternate means ("put the check in the mail"), they receive whatever notification you have setup to be sent/received, they can check the status of the order in their history, etc...

    Right. The moneyorder module collects no payment online when the order is placed. The order is left in "Pending" status (ie: unpaid) until you update it to "Processing" (paid and awaiting shipment) in the admin, yourself.
