Which speaks to your second point about manually creating the sitemap first. However, I have no idea how to go about doing that.

It looks like it might be a good time to migrate, which is something I've been considering recently, anyway, since I've found that my host company is more expensive then others.

When they stated "not Unix" that should have told you to run from them, not walk.

And you cannot install plug-ins without their permission. Not acceptable.

I'd like to get this mod in place, if possible.

You likely don't have any controls such as cpanel. Don't waste your time fussing with this. Move to another hosting provider.
