Cannot instantiate email function

I keep getting this error every time I try to check out of my store

Email Error: Could not instantiate mail function. Please check Admin->Configuration->Email Options->Email Transport.

I checked said items, and filled int the nesssesary info, but when I click save, or update, it dosen't seem to want to save the info I entered

Not sure if this is the case with you but I just had this happen all of a sudden with no changes on my end.

Turns out a very minor PHP version upgrade to 5.2.13 was the culprit for me.

Fortunately I was able to simply upload the /includes/classes/class.phpmailer.php file from the newest ZenCart version 1.3.9 and things got working again.

I saw and read a lot of these in my searches but this one was the most recent with no solution so here it lies. Lots of other potential causes and solutions so do some reading too.
