skip 1-prod how?

Skip 1-prod Categories ->true

Is set to true but anyway my zen cart shows one product categories

How can I fix this?

The link you provided is to a sub-category, and I don't think Zencart will pass through the 'skip 1 product' feature through subcategories.

The idea is that if you have a category with no subcategories, and only one product, when you click on the category name, it won't show the product listing, but will go right to the product info page of the single product.

That is correct, look at how this link behaves, jumping right to the Product _info page:

SubCategories, as stevesh pointed out, are not managed in any manner by this setting ...
