How do I display more then 10 items

When I am Catalog - Catagories/Products it only lists 10 per page.
How can I change this. I have some categories with 100+ items and it would be so much easier to make changes.

admin > config > maximum values > Maximum Categories Products Display List > set to what you want

BUT this will slow the page assembly down if you select "100"
