Is there somebody who knows how to change the name of page1
in the more information section?

I've tried to change the name of the file : define_page_2.php in

includes/languages/english/html_includes
,but it didn't do the job.

Are your changes being saved? What is the file permission on the file you are editing?

includes/languages/english/html_includes is not where you do this...I pointed you to the developers toolkit and posted that most are in english.php - open it and find the following and you can change what is highlighted just as the tutorial states

// information box text in sideboxes/more_information.php - were TUTORIAL_
  define('BOX_HEADING_MORE_INFORMATION', 'More Information');
  define('BOX_INFORMATION_PAGE_2', 'Page 2');
  define('BOX_INFORMATION_PAGE_3', 'Page 3');
  define('BOX_INFORMATION_PAGE_4', 'Page 4');
