I only need a simple store - what is the best way to proceed?

Yes, it is tricky finding the exact pages you need, especially if you are on a deadline, I set myself a couple of weeks to understand Zen but now I'm on week four on my education, not even on my live one.
The trick is understanding how pages onscreen are made up of so many components, then asking yourself questions like "Is this a product related element?" "Is this a shipping related element." or "Is this just a layout element?" etc.
If you are looking for dynamic data, then certainly you will be digging through Admin looking for the right setting to switch it on or off.
As you've probably found out by now switching category names on or off is an Admin switch not a file to edit, although having said that my last major change was the editing of a page to remove the message box from the Tell A Friend form, which did need code changes.
Personally I feel a lot safer avoiding anything to do with heavy coding.
