category order and length of title

I would like to arrange my categories, not in alpha order, but by custom order that I choose. Can not find where to do that.

Also, I would like to use longer Category Titles, Ironically I only need to add two more characters.

Any Clues are greatly appreciated.

Found the order, thank God it wasn't a snake . . .
Arrange the categories numerically. Duh . . .

Still don't see the category title length . . .
