Use the encrypted master password mod.
Shop for or with the customer on line. When they have decided on the item(s) they want, ask for their information and register using their email address they give to you. You ask for and enter their CC data just as if you were the customer on line.
Set up a standard password and tell them to log on later if they wish to change it.

By the way, you'll be receiving both a welcome email and an order confirmation. I've set your password to "customer###" (I use their order #) so you can shop on line using your email address and that password. You can change the password the next time you log on or remember that you can call us as well.
If they call and are already a customer, you use their email address and your master password to log on as them and make the order.
