New to Zen Cart ~ Some questions

Hi, I just downloaded Zen Cart yesterday and have spent about 15 hours so far trying for the look I want. I have the apple zen template and I am NOT one to post for help, but I have searched and searched for a few things and I can't seem to find what I'm looking for.

For the life of me, I can't figure out how to add my own categories under "home" where it drops down to say "Header_title_blah blah" and "Header_title_categories". I honestly would love to just get ride of those and add my own links there, but if that's not possible, then I just need to know how to change those.

Also, on the home page, I'd like to show some larger images of my templates. How can I do that?

Okay I think that's it for now! I can continue to search for answers to my other questions, but the "home" and "Header_title_categories" is driving me nuts!
