Can I exclude a folder from a 301 redirect?

We're about ready to have the zencart version of the store go live. In doing so, we were going to 301 redirect the x-cart version of the store. Both are in sub-folders:

site.com/x-cart/
site.com/zencart/

Instead of importing in all the orders and such uptodate from x-cart, we were hoping to keep the admin accessible, while still redirecting the rest of the cart.

Is this feasible?

If I did both a 301 redirect of the /x-cart/ folder, and a rewritecond for the /x-cart/admin folder, will that work? Would we still be able to access the x-cart admin while still being able to redirect the rest of the site to the public?
