How do I get my categories and products into my CSS menu in my header?

How do I get my categories and products into my CSS menu in my header?

Hi,

I am trying to change the layout of my CSS menu header so that, along the top, are displayed the name of my categories and, when they are highlighted, the products within them will be displayed.

My question is....how do I reference the headings of my categories that are in my database. For example, 'Dog Supplies' and 'Cat Supplies'?

Would it be in this sort of format? And, if so, how would I get it to read the name of an individual category?:

<li class="submenu"><a href="<?php echo zen_href_link(FILENAME_DEFAULT); ?>"><?php echo HEADER_TITLE_CATALOG; ?></a>
