Custom Payment entered by Customer for Service

I am trying desperately to come up with a solution to this issue.
I would like all transactions to be completed though this shopping cart but due to the nature of my business there are some services which vary in price for each customer. How can I have a product or option for which the customer can input the amount he will pay and then process that amount as payment?
