help with a few things please

Hi there how do i take the catergorie links on the top of the page off,
how do i change the page title,

how do i take off the : Congratulations! You have successfully installed your Zen Cart™ E-Commerce Solution.

I am new to this and would appreciate any help

Admin>Configuration>Layout Settings: Categories-Tabs Menu ON/OFF (set to 0)
