Overnight delivery avail on certain products

Is there a way to make only certain products available for certain shipping methods?
ex: Tapestry - NDA Available
Canvas - Can not turn overnight
If so, please clue me in.

What happens when you have a mixed cart of products that use both methods ... then what should happen?
