At Contact Us page, show something wrongly like the following picture, How to remove it

When I check order Paypal status show red cross not notify customer yet, but I sure Paypal already sent email to customer.

??? How to fix it

Where I can change customer notifications (order confirmation/update etc ) use my own words

that red X just means that the customer was not notified of that update. Just a confirmation for your records.
Actually have to edit each file manually I believe. There are no define pages for those. You can however add any comments that you like to the customer when you change or update any order status.
