Handling non-inventoriable products

I would prefer not to have quantities on my non-inventoriable products (gift certificates & downloadables). If I put quanities on them, then I have to put the quantities in Quickbooks, and that makes it appear as if I've purchased the products from the manufacturer. In the case of downloadables, I don't actually purchase (pay them) until there is a sale. (I need the qty in Quickbooks so when I sync w/ ZC, the qty in ZC doesn't get zeroed.)

Is there a good way, or a way, to handle this?

Not really ... if you are tracking stock then you do need a quantity and that should be above the low order level so you do not get notices on that ...

You could customize your Product Info page to not display the stock ...

As to working with Quickbooks ... I am not sure what to tell you on that one ...
