If you're referring to the date/time information in your admin menu bar, that comes directly from the server hosting your website. That's its clock detail.

Since the current version of the Zen Cart UI doesn't offer the option of setting the date-added manually, I must assume that you're making such edits manually using something like phpMyAdmin.
When making raw database edits, it's VERY important that you follow the same formatting conventions as the server itself uses. In the case of MySQL, proper date/time notation follows a specific format. For dates, it's YYYY-MM-DD.
Since you've entered the date in the wrong format, it's displaying a default fallback value when the data is retrieved.
