Newbie Question regarding Shipping options

I can't figure out how to do what I want.

First of all, I want weight for my products to be in Kg. I suspect this is very easy, but can't find the option.

Secondly, I want shipping costs to be auto calculated based on total weight of items AND destination.

Destination should be 3 Groups which would be UK (Store is UK based!), Europe and Rest of World.

Is this easily achieved and if so, how

Thanks for the quick reply, very helpful.

And reading a few more posts I have just found the Big Royal Mail Addon which looks like it will do what I want, so am installing it now.
