How can I change the defaults related to Address info on create-account page?

I would like to edit the address filed where new customer add there details so as it shows as Uk rather than US i.e. change state/province to county etc..

Can anyone advise me as to the way to go about this

Admin > Configuration > Customer Details > Create Account Default Country ID
