trying to decipher the following errors in myDebug file

The error message is telling what's wrong:
It's trying to access a file named tpl_checkout_default.php in your /includes/templates/template_default/templates folder, but can't find it.

Zen Cart v1.x doesn't have a "tpl_checkout_default.php" so, I suspect the root cause of your problem is a mis-installed addon ... likely the FEC addon which uses a different checkout process.
