Change USA English to UK English

Hi
I can't find out how to change the default text from American to UK English. Words like catalog don't look good on my site and I wanted to remove all American spellings of words. Is this possible?

Open includes/languages/english.php and edit the define statements in that file.

Open includes/languages/english/*.php and edit the define statements in all of the files located in that directory.
